My favorite Holiday cookie. Simple and easy to make, and man are they delicious!

Cookie Wafer

1 cup softened butter or margarine

1/3 cup whipping cream

2 cups flour

granulated sugar for coating wafers

Mix the butter, whipping cream and flour together until you get a smooth consistency. Place in a bowl and cover, and store in the fridge for at least 1 hour. This can be left overnight in the fridge if you need too.

1 1/2 cups powdered sugar

2 tsp vanilla

Mix the filling until smooth, then divide in half. Color one half red and the other green.


Heat the oven to 375?. Roll out 1/3 of the dough at a time, until it is 1/8" thick. Try not to re-roll the dough more than twice. Cut wafers with 1 1/2" round cookie cutter. Coat each side with the granulated sugar. Transfer to a baking sheet lined with parchment paper, and make sure to puncture the cookies with a fork before baking. I made three rows of four holes. Bake for 7 - 9 minutes, but I would stay closer to 7. Since there is no egg in this recipe you can under cook them and it will be fine. Transfer to a cooling rack when done. Make sure they are completely cooled before filling.

The Town of Pine Apple was settled by 1816, originally named Friendship in the 1820s and later designated Pine Apple by the United States Post Office in 1851. Pine Apple was incorporated on February 24, 1872. The following commercial ventures served the community from this area: automotive agency, bank, barber, blacksmith, boarding house, butcher shop, cotton gin, drug store, garage and service stations, general store, gift shop, grocery stores, hair salon, hotels, ice house, insurance agency, livery stables, mercantile stores, newspaper, quail hatchery, radio station, restaurant, sawmill-planer mill, seamstress, spoke and handle factory, tannery, telephone exchange, wheelwright, and woodshop. Pine Apple also had a calaboose, churches, civitan club, doctors and dentist offices, fire department, Matheson Library, Masonic Hall, Moore Academy, New Century Club, Pine Apple Depot, post office, public pool and bath houses, and tennis courts. Pine Apple experienced the War Between the States, the burring of the town in 1903, and the Great Depression, and sent sons to war in support of this country.

The Varsity Twin Cinemas closed on Father's Day after 67 years. Its closing marks the loss of one of Honolulu's last great movie houses, a neighborhood and city landmark, that once served double duty as a theater and an overflow lecture hall for the crowded UH Manoa campus. Over the years, as my wife personally bid farewell to several old theaters, we knew the Varsity's days were numbered. Yet it was still hard to say goodbye. In these days of cookie-cutter sterile mall multiplexes, she was a gem. And will be missed.

Varsity manager Crystal Kawai is comforted by one of many long-time patrons who came to say goodbye to her and her theater.
